These qualifications are suitable for managers, supervisors and senior hygiene personnel including:
- Production managers
- Owners or managers of food businesses
- Supervisors or shift managers
- Hygiene auditors
The Level 4 qualifications are essential for those in a management or supervisory role and provide an in-depth understanding of the principles of good practice in food safety with emphasis on the importance of the management of systems and staff.

- Food storage, temperature control and preservation
- Design and construction of food premises and
- Cleaning and disinfection

- Personal hygiene

Five day programme.
Assessment is by a controlled assignment and an examination paper which are both completed under examination conditions.
Course Requirements / Notes:
It is recommended that candidates have an understanding of food hygiene and safety to Level 3 (Supervisory level) and ideally hold a current level 3 qualification (within the last 3 years).
